Ingredients
- 1 lb lean ground turkey
- 1 tablespoon olive oil
- 1/2 sweet onion, chopped
- 1 red bell pepper, chopped
- 1 poblano pepper, chopped or sliced

- 8 eggs
- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup fresh basil + cilantro, chopped
- 1 avocado, sliced
- 4 burrito-size tortillas
Instructions
- Heat a large skillet or wok over medium heat. Add the ground turkey and cook until browned and cooked through, breaking it up as it cooks. Drain any excess liquid, then push to the side of the skillet.
- Add a small drizzle of olive oil to the skillet and set over medium heat. Add the onion, red bell pepper, and poblano pepper. Cook for 5 minutes or until softened. Add the garlic and cook 30 seconds longer. Season with salt and pepper, then remove the veggie mixture to a plate.
- Return the skillet to medium heat and add another drizzle of olive oil. Whisk together the eggs and shredded cheddar cheese in a bowl. Pour the eggs into the skillet and scramble until cooked through, about 3–5 minutes. Season with salt and pepper, then remove from heat. Stir in the fresh basil and cilantro.
- Warm one tortilla at a time in the microwave for 30 seconds.
- Working quickly, layer the scrambled eggs, veggie mixture, ground turkey, and avocado slices toward one end of the tortilla. Fold the sides in, then roll up tightly.
- Wrap each finished burrito in tin foil to keep it packed tight.
- To reheat, place burritos in the oven at 350°F for 10 minutes or until warmed through.
